This Avocado Bison Burgers recipe is a great way to get avocado in your diet and try a meat you may not typically eat. It’s also truly one of the most delicious healthy grilling recipes you can try.

Theses Bison Burgers are easy to make, incredibly flavorful and juicy, and – just like pork burgers – make a nice variation from beef. Bison is leaner than beef, so make sure not to overcook these burgers. I grill them quickly and serve them in a bun with lettuce and tomatoes. They’re also great in a lettuce wrap or simply on a plate, eaten with a fork and a knife!

How to make Avocado Bison Burgers

Ingredients

  • 2 pounds grass-fed bison meat, ground
  • ⅔ cup shallots, finely diced
  • ½ cup scallions, sliced
  • 2 tablespoons coconut aminos
  • 1 teaspoon dijon mustard
  • 2 garlic clove, minced
  • 4 teaspoon fresh thyme (or 1 teaspoon dried thyme)
  • sea salt and black pepper
  • 4 large pieces of iceberg lettuce
  • 1 whole avocado cut into large pieces
  • 1 large tomato cut into slices

Directions

  1. In a medium bowl, mix all the ingredients except the avocado, lettuce and tomato together.
  2. Form 8 patties.
  3. Chill in refrigerator for about 10–20 minutes to firm up.
  4. Grill over high heat until cooked through to medium.
  5. Serve hot on an Ezekiel bread or gluten-free bun topped with lettuce, avocado and tomato slice (or for a grain-free option use butter lettuce leaves instead of a bun).

Recipe Tips

  1. To make sure the burgers turn out juicy and tender rather than dense and tough, handle them lightly when you mix the spices into the meat and when shaping the mixture into patties.
  2. Bison is leaner and has less marbling than beef. Its flavor is similar to beef but milder. Because it’s lean, it’s best to cook it over medium or medium-high heat (not high) and grease your grill well to prevent sticking. Because of its leanness, it’s also important to avoid overcooking it.
  3. Making a dimple in the center of each burger helps prevent them from puffing up and losing their shape as they cook, but it’s not foolproof. Sometimes, the burgers slightly puff on the grill despite the dimple. They are still delicious, so don’t worry about it too much!
  4. Storage: You can keep these burgers in an airtight container in the fridge for 3-4 days. Reheat them in the microwave at 50% power. You can also freeze the cooled leftovers in freezer bags, in a single layer, for up to three months. Thaw them overnight in the fridge.
