Ok listen, college Carrian was a different Carrian. I was just trying to survive all the things and have a dang good time. Money? Not really. Time? None. Skill? I mean, I could make a few things…

Law and Order SVU? Yes.

My second year of college a roommate introduced me to Law and Order SVU. About once a week we’d watch an episode while we ate either a freezer chicken cordon bleu or a New York Burrito from the other side of town. Those frozen chicken cordon blue’s were fancy and I would savor every bite.

I no longer can stomach the show, once you have kids all of that content is a bit much for the soul. And I can’t really get behind that frozen log of chicken, so I needed a new recipe to bring back the nostalgia and this casserole is exactly that.

What is Chicken Cordon Bleu?

Chicken cordon bleu is a French dish where chicken is wrapped around ham and cheese, breaded and pan fried or deep fried. This casserole recipe uses all the classic chicken cordon bleu flavors without the tedious task of creating and frying the rolled chicken. It’s sort of a deconstructed, simpler version of chicken cordon bleu, if you will.

Ingredients for Chicken Cordon Bleu Casserole

  • Chicken Breasts
  • Unsalted Butter
  • Flour
  • Chicken Broth
  • Whole Milk
  • Dijon Mustard
  • Nutmeg
  • Garlic Powder
  • Lemon Juice
  • Kosher Salt
  • Black Pepper
  • Ham
  • Swiss Cheese
  • Butter
  • Panko Bread Crumbs

How to Make Chicken Cordon Bleu Casserole

Casseroles are a total comfort food, and this chicken cordon bleu casserole is creamy, rich and indulgent. It’s so quick and easy to make. Here are the steps:

  1. Prep: Preheat the oven to 350 ℉ and spray a 9×13″ baking dish with nonstick spray.
  2. Cook the Chicken: Add oil to a skillet over medium-high heat. Season the chicken with salt and pepper then add it to the skillet. Reduce the heat to medium-low and cook for 5-7 minutes per side. Once cooked through, remove to a cutting board and let it rest before chopping.
  3. Create the Sauce: Melt the butter in a saucepan over medium heat then whisk in the flour and let it bubble until golden brown. Slowly pour in the broth and milk and whisk until thickened. Whisk in the rest of the sauce ingredients.
  4. Make the Casserole: Add the cooked chicken and ham to the sauce and stir to combine then add in half of the cheese and stir until melted. Pour the chicken mixture into the prepared baking dish and top with the rest of the cheese.
  5. Make the Topping: In a small saucepan, add the butter and then add the panko breadcrumbs to the melted butter and stir until browned. Sprinkle the breadcrumbs over the top of the casserole.
  6. Bake: Place the casserole until the preheated oven and bake for 30-35 minutes. Serve and enjoy!!

What This Recipe Be Made…

I buy Costco’s rotisserie chicken and use my food saver to separate into 3 bags so that whenever I need chicken for enchiladas, soup, etc., it’s already cooked and ready to go. I also think it brings the best flavor to this particular dish as it’s moist and well seasoned without being over the top.

Recipes Substitutions and Variations

Swiss cheese is the classic cheese for chicken cordon bleu but if you aren’t a Swiss cheese fan, it can be swapped for mozzarella, provolone or white cheddar.

If you don’t have ham on hand (hello Easter leftovers!!), you can use bacon instead. Just be sure it is cooked first.

Add cooked egg noodles to this casserole to make it even more kid-friendly. Kids love noodles!

What to Serve with Chicken Cordon Bleu Casserole

Anytime I make a rich and saucy casserole, I love to have bread to dip in the sauce. Our potato rolls would be a great option or our fabulous herbed focaccia bread!

With all those rich flavors, I also like to make a light and bright side dish with it. Our spinach strawberry feta salad would be a great addition or our tomato cucumber salad.

A vegetable side dish would also be a great option like roasted broccoli or sauteed sugar snap peas.

Can Chicken Cordon Bleu Casserole Be Made Ahead of Time?

This is a great make ahead recipe! It could be made up to a couple of days ahead of time. Follow the recipe as written all the way up until adding the toasted panko crumbs on top. Cover and store in the refrigerator until ready to bake. Top with the breadcrumbs and bake as written in the instructions.

This would be a great idea for making for someone who just had a baby or for a sick neighbor.

Storing and Reheating

Leftovers should be stored in an airtight container in the fridge. It will keep for up to 5 days. You could also cover the casserole dish with plastic wrap, and then the casserole is easy to reheat in the same pan.

I recommend reheating the casserole in the oven at 350 ℉ for 10-15 minutes or until heated through. It could also be reheated in the microwave if you’re just warming up a single serving for lunch.

Description

  • 1 Tablspoon Olive Oil
  • 4 Chicken Breasts, boneless, skinless, cut into 1" pieces (see note)
  • 6 Tablespoons Unsalted Butter
  • 6 Tablespoons Flour
  • 1 Cup Chicken Broth
  • 1 Cup Whole Milk
  • 1 Tablespoon Dijon Mustard
  • 1 Dash Nutmeg
  • 1/2 teaspoon Garlic Powder
  • 2 teaspoons Lemon Juice
  • 1 teaspoon Kosher Salt
  • 1/2 teaspoon Black Pepper
  • 8 oz Ham, chopped
  • 4 Cups Swiss Cheese, shredded, divided
  • 1 Tablespoon Butter
  • 1 Cup Panko Bread Crumbs
  • Preheat oven to 350 ℉. Spray a 9×13" baking dish with nonstick spray.

  • Skip this step if using rotisserie chicken. In a pan over medium high heat, add a tablespoon of olive oil and season the chicken with salt and pepper. Add the chicken and turn to medium low. Cook 5-7 minutes per side, or until cooked through. Remove to a cutting board and rest 5 minutes before chopping.

    1 Tablspoon Olive Oil, 4 Chicken Breasts

  • Meanwhile, melt the butter in a saucepan over medium heat. Whisk in flour and let bubble until light golden brown and toasted, about 2 minutes.

    6 Tablespoons Unsalted Butter, 6 Tablespoons Flour

  • Slowly pour in the broth and milk, continuing to whisk and simmer until thickened, 4 to 6 minutes.

    1 Cup Chicken Broth, 1 Cup Whole Milk

  • Whisk in mustard, nutmeg, garlic powder and lemon juice along with the salt, and pepper.

    1 Tablespoon Dijon Mustard, 1 Dash Nutmeg, 1/2 teaspoon Garlic Powder, 2 teaspoons Lemon Juice, 1 teaspoon Kosher Salt, 1/2 teaspoon Black Pepper

  • Stir the chicken and ham into sauce. Stir for 2 minutes and add in 2 cups cheese and immediately transfer to the baking dish.

    8 oz Ham, 4 Cups Swiss Cheese

  • Top with the last 2 cups of the cheese.

    4 Cups Swiss Cheese

  • In a pan, add the butter and once melted add panko and stir until browned and sprinkle over the top of the casserole. Bake 30-35 minutes and serve.
