These easy breakfast tacos are the perfect way to switch up your morning routine! Loaded with fluffy scrambled eggs, crispy bacon, creamy avocado, and melty cheese, they’re simple, satisfying, and full of flavor.

Eating healthy breakfast tacos are my favorite way to start the day, but we often enjoy them for lunch and dinner too! No one ever complained about breakfast for dinner!

What Are Breakfast Tacos?

Breakfast tacos are a quick and easy meal made with eggs, protein like bacon or sausage, and toppings wrapped in a tortilla. They can be customized in endless ways.

Ingredients You’ll Need

This breakfast recipe has a couple breakfast stars…bacon and eggs…and a few other simple ingredients. Here is everything you’ll need:

  • Colby Jack Cheese or Chihuahua Cheese: Melts beautifully and adds a creamy, slightly sharp flavor.
  • Corn Tortillas: Soft, slightly chewy, and perfect for holding all the fillings.
  • Eggs: Fluffy scrambled eggs are the hearty base of these tacos.
  • Bacon: Crispy, salty goodness that adds tons of flavor.
  • Avocado: Creamy and cool, it balances the warm ingredients perfectly.
  • Salsa: Adds brightness, acidity, and a little kick.
  • Aleppo Pepper: Mild heat with a hint of sweetness. So good!!
  • Flaked Sea Salt: Finishes everything with a little crunch and flavor pop.

How to Make Breakfast Tacos

With school starting back up in a couple weeks, breakfast needs to be ready fast and these quick breakfast tacos are my go-to for a healthy satisfying breakfast. Here’s how to make them:

  1. Warm the tortillas: Heat the corn tortillas in a skillet until soft and lightly toasted.
  2. Melt the cheese: Sprinkle cheese directly onto the hot pan, then place a tortilla on top. Let the cheese melt and crisp slightly.
  3. Add the fillings: Fill each tortilla with scrambled eggs, crispy bacon, and sliced avocado.
  4. Finish and serve: Top with salsa, a pinch of Aleppo pepper, and flaked sea salt. Serve immediately.

Substitutions and Variations

Protein: Swap bacon for sausage or chorizo

Veggies: Add sautéed peppers and onions

Tortilla: Use flour tortillas if preferred

Potatoes: Bulk up the filling with hashbrowns

Heat: Add hot sauce for extra heat

How to Make Breakfast Tacos Ahead of Time

  • Cook bacon and eggs in advance
  • Store separately in the fridge

Storing and Reheating

Once the tacos have been assembled, they don’t store very well. The taco components are best stored separately and assembled right before serving. Leftover eggs and bacon will keep for up to 3-4 days. They can be reheated in the microwave or on the stovetop.

  • 6 Corn Tortillas
  • 2 Cups Colby Jack Cheese, or chihuahua cheese
  • 6 Eggs, scrambled
  • 12 Slices Bacon, cooked
  • 1 Avocado, sliced
  • Salsa, if desired
  • Aleppo Pepper
  • Flaked Sea Salt
  • Cook the corn tortillas in a skillet until cooked through and slightly charred around the edges. Remove them from the skillet.

    6 Corn Tortillas

  • Sprinkle about 1/3 cup of cheese on the hot pan and put one tortilla on top.

    2 Cups Colby Jack Cheese

  • Once the cheese has browned, lift the cheesy tortilla from the skillet. Then fill it with scrambled eggs, crispy bacon, avocado, a little salsa. You can also just sprinkle some aleppo pepper flakes and flaked sea salt on top if you don't have salsa.

    6 Eggs, 12 Slices Bacon, 1 Avocado, Salsa, Aleppo Pepper, Flaked Sea Salt

  • Repeat with all the tortillas. Serve and eat immediately.
