Blueberry Pancakes

This pancake recipe is quite simple — you probably have all the ingredients in your pantry already. There’s flour, baking powder, sugar and salt combined with milk, egg, butter, lemon juice and lemon zest. The blueberries are plopped on after the pancake batter goes on the griddle.

This recipe combines the very best of both worlds: fluffy pancakes a juicy blueberries (either fresh or frozen) into the perfect pancake batter.

How to make Lemon Blueberry Pancakes

Ingredients

  • 1 ¼ cups all-purpose flour
  • 1 tablespoon aluminum-free baking powder
  • 1 tablespoon granulated sugar
  • ½ teaspoon salt
  • 1 cup milk
  • 1 large egg
  • 1 tablespoon unsalted butter, melted
  • Zest from 1 lemon
  • 2 tablespoons lemon juice
  • 1 cup blueberries, plus more for serving
  • Vegetable oil, as needed
  • Maple syrup, for serving

Directions

  1. In a large bowl, whisk together the flour, baking powder, sugar and salt. In a separate bowl, whisk together the milk, egg, butter, lemon zest and lemon juice.
  2. Add the milk mixture to the flour mixture and stir with a rubber spatula until combined.
  3. Heat a griddle or large skillet over medium-high heat. Add 1 to 2 teaspoons of vegetable oil to the skillet.
  4. Pour or scoop ¼ cup of batter and sprinkle with a few blueberries for each pancake. Wait until bubbles form to flip. Continue cooking for an additional minute to cook through, flip and brown on the other side. Remove from the pan or griddle and cook the remaining pancakes. Repeat with the remaining pancake batter.
  5. Serve topped with additional blueberries and maple syrup.
  6. Enjoy!

Tips:

  • One way to avoid overmixing the batter and end up with chewy pancakes is to break up the eggs with the milk first, directly in the bowl, and once those two are combined, gently mix the wet ingredients with the flour mixture.
  • While these pancakes are flavorful and can stand on their own, you might want to top them with a little butter and pancake syrup for added goodness. Of course, they’re also the perfect base for pancake toppings and blueberry syrup for extra blueberry flavor.
