Mango Chicken Salad
This delicious mango chicken salad is the perfect fusion of Asian inspired flavors with protein, fresh fruits, and veggies.

Cook Time 5 minutes
Total Time 25 minutes
- ▢ 6 cups chopped romaine lettuce
- ▢ 2 cups shredded red cabbage or coleslaw mix
- ▢ 1 red bell pepper thinly sliced
- ▢ 2 cups cooked chopped chicken
- ▢ 1 mango peeled, pitted, and sliced
- ▢ ½ English cucumber sliced
- ▢ ½ cup Asian sesame dressing store-bought or homemade, more to taste
- ▢ 2 green onions thinly sliced
- ▢ ¼ cup chopped fresh cilantro or mint, or both
- ▢ ¼ cup dry roasted peanuts crushed
In a large bowl, add romaine, cabbage, and bell pepper. Toss to combine.
Top with chicken, diced mango, and sliced cucumber.
Drizzle with the dressing and top with green onions, cilantro or mint, and roasted peanuts.
Other optional additions to this salad include fresh bean sprouts, sliced snap peas, julienned carrots, or water chestnuts.
