- Make it meaty and add frozen meatballs, or leftover ground beef, chicken, or Italian sausage.
- Try adding some frozen peas or corn, or green beans with the pasta for extra color and nutrition.
- Try using chicken broth, homemade chicken stock, or vegetable stock in place of beef broth for a lighter-tasting variation.


How to Make Alphabet Soup
- In a large soup pot, sauté the vegetables (except the potato) and garlic until softened.
- Add remaining ingredients (except alphabet pasta) and bring to a boil.
- Add alphabet pasta and simmer until noodles are al dente (full recipe below).
Tips & Tricks for Storing Soup
Store alphabet soup in a covered container in the refrigerator for up to 4 days. Reheat in the microwave or on the stovetop.
If freezing, write the date on the outside of the zippered bag and store in the freezer for up to one month.

Alphabet Soup
Alphabet noodles are cooked with veggies, broth, and simple seasonings to make a cozy soup that’s full of flavor and fun for both kids and grown-ups.
Prep Time 15 minutes
Cook Time 25 minutes
Total Time 40 minutes
- ▢ 1 tablespoon olive oil
- ▢ 1 carrot sliced
- ▢ 1 rib celery sliced
- ▢ ½ onion diced
- ▢ 2 cloves garlic minced
- ▢ 5 cups beef broth reduced sodium
- ▢ 1 cup water
- ▢ 14 ounces canned diced tomatoes with juices
- ▢ 2 tablespoons tomato paste
- ▢ 1 potato diced
- ▢ 1 teaspoon Italian seasoning
- ▢ salt and pepper to taste
- ▢ 1 cup alphabet noodles uncooked
In a large pot over medium heat, heat oil and add carrots, celery, onion, and garlic. Saute until onion begins to soften.
Add broth, water, tomatoes, tomato paste, potato, and seasonings. Bring to a boil and turn down to a simmer for 15 minutes.
Add alphabet noodles and cook for 7-8 minutes or until noodles are cooked al dente.
- Fresh vegetables can be substituted for frozen veggies.
- Cooked ground beef, shredded chicken, or mini meatballs can be added.
