Fresh pineapple and homemade ice cream are two of my summer favorites. So, naturally, combining the two into a batch of sweet and creamy pineapple ice cream was going to happen.

Pineapple Ice Cream

There are a couple of requirements for this ice cream. First, the pineapple must be fresh. And second, it must be sweet. Mediocre “okay” pineapple isn’t going to cut it for this ice cream, because that fresh pineapple carries the flavor here.

If you buy a pineapple and it turns out to be less than amazing, just enjoy it as the refreshing fruit that it is, or try using the pineapple in some pineapple rice, or pineapple jalapeno salsa, or in a smoothie. Wait to make this ice cream when you get your hands on a truly delightful pineapple. It makes a big difference, friends.

And for what it’s worth, the same thing goes for most ice creams that include fruit. With baked goods, you can often get away with using less than perfectly sweet fruits, because you’re adding so many other ingredients that bring out the flavors. With ice cream? It’s all about the fruit and the cream, so the fruit’s flavor needs to be strong and sweet.

Fruit Ice Cream

For more awesome ice cream that you can make with fruit, try this old-fashioned strawberry ice cream. It is made simply with strawberries, sugar, cream, and milk. Just a few ingredients add up to a summer ice cream treat that everyone loves.

This creamy, rich blueberry ice cream is filled with chunks of dark chocolate that will melt in your mouth. Oh, my friends, make this. You won’t regret it – and I’m willing to bet that you’ll fall in love with it at first bite. I know I did.

The quintessential summer flavor combination of peaches and cream has been transformed into cold and creamy scoops of peach ice cream, and it is everything I imagined it would be. I found myself repeatedly going back to the freezer for “just one more taste, you know, to make sure it’s perfect” the first time I made this ice cream. Spoiler alert, yes, it’s perfect.

This sweet and slightly tart cherry ice cream is made with just a handful of easy ingredients. No custard base, no eggs, no cooking time, just a quick whirl in the blender with sweet cream, sugar, and cherries.

Creamy, real banana ice cream studded with pieces of vanilla cookie and pockets of sweet whipped cream combine to make banana pudding ice cream. If you like banana pudding, you’ll go wild for this!

Servings: 6 ½ cup servings

  • 2 cups fresh pineapple
  • 1 tablespoons fresh lemon juice
  • cup sugar adjust to taste
  • ¼ teaspoon kosher salt
  • ½ teaspoon vanilla extract
  • ¾ cup whole milk
  • 1 cup heavy cream
  • Combine the pineapple, lemon juice, sugar, salt, vanilla, and milk in a blender. Puree until smooth. Add the cream and pulse to combine.

  • Pour into your ice cream maker and churn according to the manufacturer’s instructions. Transfer the finished ice cream to an airtight container and place in the freezer until ready to serve.

These are my favorite inexpensive containers for storing ice cream. They’re perfect for gifting (who doesn’t love homemade ice cream?) storage, re-using, etc. I write the flavors on the lids with a sharpie and it washes off with dish soap.

I have more ice cream scoops than I can keep track of at this point and I definitely play favorites. This ice cream scoop does the best job ever of cutting through firm ice cream and still delivers a pretty scoop. It gets bonus points for being one of the least expensive scoops I own as well.
