Ingredient Tips for Rotisserie Chicken Soup

  • Chicken: Pick up a store-bought rotisserie chicken from the market or make one and season it any way you like. Be sure to remove the skin before shredding.
  • Pasta: Hearty pasta like rotini, penne, or cavatappi works best in rotisserie chicken soup. Egg noodles, white beans, or instant rice are other good starches to try.
  • Veggies: Onions, celery, and carrots make up a flavorful trio called a ‘mirepoix’, the foundation for many recipes. Add extras like a bag of mixed vegetables, peas, spinach, zucchini, peppers, or any leftovers from the fridge.
  • Broth: Use any broth brand you like or make a homemade one.
  • Variations: Make crunchy tortilla toppings by cutting 6 small corn tortillas into ¼” strips and frying them in oil until they’re crispy. Croutons are another crunchy topping for rotisserie chicken soup.

How to Make Chicken Soup with Rotisserie Chicken

  1. Cook onion, celery, and carrots in butter in a large soup pot.
  2. Add flour and seasonings and cook. Stir in broth and water (full recipe below).
  3. Add pasta and chicken and cook until tender.
  4. Season before serving.

Storing Soup

Store leftover rotisserie chicken soup in a covered container in the refrigerator for up to 4 days. Reheat portions in the microwave or on the stovetop.

Freeze soup in zippered bags for up to 4 months after removing the pasta. Add new pasta to the soup in Step 4 and follow the recipe directions as written.

Rotisserie Chicken Soup

Rotisserie chicken soup is a warm, comforting dish that’s full of rich, savory flavor and comes together in no time!

Prep Time 20 minutes

Cook Time 30 minutes

Total Time 50 minutes

  • 1 tablespoon butter
  • 1 medium yellow onion diced
  • 2 ribs celery sliced
  • 2 carrots sliced
  • 1 teaspoon all-purpose flour
  • ½ teaspoon garlic powder
  • ¼ teaspoon ground sage
  • ¼ teaspoon dried thyme leaves
  • 4 cups chicken broth
  • 2 cups water
  • 4 ounces whole wheat rotini or medium pasta, about 1½ cups dry
  • 2 cups shredded rotisserie chicken
  • In a large soup pot or Dutch oven, melt the butter over medium heat. Add the onion, celery, and carrots and cook until they begin to soften, 3-4 minutes.

  • Add the flour, garlic powder, sage, and thyme and cook for 2 minutes, stirring occasionally.

  • Add the broth and water and turn the heat up to medium-high. Bring to a boil.

  • Once boiling, add the pasta* and reduce the heat to a low boil. Cook until the pasta is tender (this can vary by brand), approximately 7 to 9 minutes.

  • Stir in the chicken and cook 1 to 2 minutes or until heated through. Taste and season with salt and pepper.

For Planned Leftovers: If you are planning for leftovers, reduce the water to 1 cup in the soup and cook the pasta on the side. Store the pasta and the soup separately and add the pasta to each bowl when serving.

Storage Tip: I strain the broth and store it in a separate container to keep the noodles from getting soggy.

Keep leftover soup in an airtight container in the refrigerator for 4 days and in the freezer for 4 months.
